Broccoli Raab Penne Pasta
  • Cima de Rapa broccoli raab

  • Olive oil
  • Garlic
  • Freshly grated parmigiano cheese

    Steam Cima de Rapa broccoli raab for just two to three minutes until bright green. Drain. Cook penne pasta until al dente; drain and toss with a little olive oil in a large bowl; set aside. In a large, heavy skillet, heat olive oil and stir-fry broccoli raab and garlic until garlic is just cooked, releasing its rich flavor. Add the cooked penne pasta and add freshly grated parmigiano or romano cheese. (You may also add cooked slices of sweet Italian sausage for a more hearty, winter dish.)
