Tuscan Spinach with Raisins
  • One pound of Nordic IV Spinach, rinsed and torn
  • Handful of raisins
  • Olive oil
  • Toasted pine nuts
  • Salt to taste

    Rinse the spinach leaves and pat dry. Pre-soak a handful of raisins in boiling water for 30 minutes. Steam the spinach for one minute. Drain the spinach and raisins and saut´┐Ż together in three tablespoons of olive oil in a large, heavy skillet for three minutes. Season with salt and sprinkle with lightly toasted pine nuts.
