Karen’s over-the-top exclamations about this salad turn out to have been understatements. “It is so good”, according to Karen, “that you will want it for breakfast, lunch and dinner!” We do. Karen adores her gardens, sheep and Japanese Chin dogs as if they were all her children. Her husband Gary Hayre is a willing gardening accomplice and an ice wine maker extraordinaire.

Strawberry Spinach Salad
  • 2 pounds baby spinach
  • 2 pints strawberries
  • 1/2 cup mayonnaise
  • 1/4 cup milk
  • 1/3 cup sugar
  • 2 tablespoons white vinegar
  • 2 tablespoons poppy seeds
  • 1 chopped red onion

    Whisk together the mayonnaise, milk, sugar, white vinegar and poppy seeds for the salad dressing. Wash and dry the baby spinach leaves well. Place the spinach leaves in salad bowls. Wash, hull and slice the strawberries. Place them on top of the spinach leaves. Sprinkle chopped red onions over the salad and drizzle the dressing over the salad. Serve and wait for the yummy reviews. Serves: 8.
